Loin Pork

Ingredients

  •   loin pork, with layer of fat, cut into pieces
  •   plain chilli sauce
  •   onion, chopped
  •   lard, hot, for frying
  •   coriander
  •   salt
  • 2 tbsp good stock

Method

  1. Coat pork with plain chilli sauce and chopped onion.
  2. Leave in fridge 24 hours.
  3. Then cut into pieces and fry in hot lard until red/brown with coriander and salt. Add 2 tbsp good stock.
  4. Heat through and serve.
