Chicken Marengo

Ingredients

  • 3 carrots, chopped
  • 2 med onions, chopped
  • 4 ozs mushrooms, sliced
  • 3 tomatoes, sliced
  • 2 celery sticks, chopped
  • 6-8 ozs precooked chicken, shredded
  • 2 bay leaves
  • 2-3 cloves garlic
  • 1 glass sherry
  • 2 teasps tomato puree
  • a pinch sugar
  •   salt and pepper
  • 2 teasps plain flour
  • 1 pint chicken stock
  • 4-6 ozs mushrooms, sliced
  • 4-5 rashers bacon, chopped and fried

Method

  1. Fry the carrots and celery, then add the onions and cook for 2-3 mins.
  2. Add the mushrooms, tomatoes and 2 bay leaves (optional at this point: 2-3 cloves garlic) and 1 glass of sherry.
  3. Add 2 teasps tomato puree, a pinch of sugar, salt and pepper, and 2 teasps plain flour and 1 pint chicken stock. Cook for 5-8 mins.
  4. Then add 4-6 ozs sliced mushrooms and the chicken (6-8 ozs). Warm carefully then serve.
  5. Also add chopped, fried bacon (4-5 rashers).

Notes

Optional: 2-3 cloves garlic. Also add chopped, fried bacon (4-5 rashers).
