Ingredients
- 3 carrots, chopped
- 2 med onions, chopped
- 4 ozs mushrooms, sliced
- 3 tomatoes, sliced
- 2 celery sticks, chopped
- 6-8 ozs precooked chicken, shredded
- 2 bay leaves
- 2-3 cloves garlic
- 1 glass sherry
- 2 teasps tomato puree
- a pinch sugar
- salt and pepper
- 2 teasps plain flour
- 1 pint chicken stock
- 4-6 ozs mushrooms, sliced
- 4-5 rashers bacon, chopped and fried
Method
- Fry the carrots and celery, then add the onions and cook for 2-3 mins.
- Add the mushrooms, tomatoes and 2 bay leaves (optional at this point: 2-3 cloves garlic) and 1 glass of sherry.
- Add 2 teasps tomato puree, a pinch of sugar, salt and pepper, and 2 teasps plain flour and 1 pint chicken stock. Cook for 5-8 mins.
- Then add 4-6 ozs sliced mushrooms and the chicken (6-8 ozs). Warm carefully then serve.
- Also add chopped, fried bacon (4-5 rashers).
Notes
Optional: 2-3 cloves garlic. Also add chopped, fried bacon (4-5 rashers).
