Bara Brith

Ingredients

  • 430 ml (¾ pt) strained tea
  • 340 g (12 oz) mixed dried fruit
  • 455 g (1 lb) self-raising flour
  • 1 teaspoon ground mixed spice
  • 230 g (8 oz) soft dark brown sugar
  • 1 egg, size 3, beaten

Method

  1. Put the tea and fruit into a bowl. Stir well then leave to soak overnight.
  2. Set the oven to Gas Mark 4, 350°F, 180°C.
  3. Mix the flour with the spice and sugar.
  4. Add the fruit with the tea and the beaten egg. Mix well, then spoon into the prepared tin.
  5. Bake for 1¼ to 1½ hours.
  6. Turn out on to a wire rack to cool. Serve thinly sliced, spread with butter.

Soak fruit in tea overnight. Bake for 1¼ to 1½ hours. Serve thinly sliced, spread with butter. Use a 0.9 to 1.35 kg (2 to 3 lb) loaf tin, greased and lined.
