Ingredients
- 430 ml (¾ pt) strained tea
- 340 g (12 oz) mixed dried fruit
- 455 g (1 lb) self-raising flour
- 1 teaspoon ground mixed spice
- 230 g (8 oz) soft dark brown sugar
- 1 egg, size 3, beaten
Method
- Put the tea and fruit into a bowl. Stir well then leave to soak overnight.
- Set the oven to Gas Mark 4, 350°F, 180°C.
- Mix the flour with the spice and sugar.
- Add the fruit with the tea and the beaten egg. Mix well, then spoon into the prepared tin.
- Bake for 1¼ to 1½ hours.
- Turn out on to a wire rack to cool. Serve thinly sliced, spread with butter.
