Fruit 'Tartare' with Spanish Rice Pudding

Serves 4 Prep 45 min Cook 35 min

Ingredients

  • 3/4 cup rice
  • 2 pints full-fat milk
  • 14 tbsps sugar
  • 250 gr (9 oz) whipping cream (85% fat)
  • 1 stick cinnamon
  • peel of 1 lemon, peel only
  • 75 gr (2 1/2 oz) mango, chopped into small pieces
  • 75 gr (2 1/2 oz) pineapple, chopped into small pieces
  • 75 gr (2 1/2 oz) melon, chopped into small pieces
  • 1 1/2 tsps honey
  • 4 tbsp lemon juice
  •   spearmint, leaves to decorate

Method

  1. Pour the milk into a pan, add the lemon peel and cinnamon and place over medium heat.
  2. When it begins to boil, add the rice and lower the heat. Simmer gently for 35 minutes.
  3. Take off the heat, add the sugar and stir it in. Then add the cream, stir in and set aside to cool.
  4. Chop the fruit into small pieces. Mix and dress with the lemon juice and honey.
  5. To serve, pour some pudding into a bowl, spoon some fruit on top and decorate with the spearmint leaves.
