whipping cream (85% fat)

lemon, peel only

75 gr (2 1/2 oz)
mango, chopped into small pieces

75 gr (2 1/2 oz)
pineapple, chopped into small pieces

75 gr (2 1/2 oz)
melon, chopped into small pieces

honey

lemon juice

spearmint, leaves to decorate
Method
- Pour the milk into a pan, add the lemon peel and cinnamon and place over medium heat.
- When it begins to boil, add the rice and lower the heat. Simmer gently for 35 minutes.
- Take off the heat, add the sugar and stir it in. Then add the cream, stir in and set aside to cool.
- Chop the fruit into small pieces. Mix and dress with the lemon juice and honey.
- To serve, pour some pudding into a bowl, spoon some fruit on top and decorate with the spearmint leaves.
