Ingredients
- pork loin, cut open to widen
- plum chutney
- small amount grated cheese
- sage leaves, or sprinkling of dried sage
- salt and pepper
- spinach, to serve
Method
- Cut loin open to widen. Stuff with plum chutney and a small amount of grated cheese.
- Cover with sage leaves or a sprinkling of sage. Season with salt and pepper.
- Cover with the outer meat and tie together with string.
- Seal in a very hot frying pan on all sides.
- Cook for 20 minutes in a 200°C oven.
- Serve with spinach. Remove all string and slice into 2" chunks.
Notes
Can stuff with apricots + prunes, OR black pudding + sliced apples instead of plum chutney and cheese.
