Pork Loin

Ingredients

  •   pork loin, cut open to widen
  •   plum chutney
  • small amount grated cheese
  •   sage leaves, or sprinkling of dried sage
  •   salt and pepper
  •   spinach, to serve

Method

  1. Cut loin open to widen. Stuff with plum chutney and a small amount of grated cheese.
  2. Cover with sage leaves or a sprinkling of sage. Season with salt and pepper.
  3. Cover with the outer meat and tie together with string.
  4. Seal in a very hot frying pan on all sides.
  5. Cook for 20 minutes in a 200°C oven.
  6. Serve with spinach. Remove all string and slice into 2" chunks.

Notes

Can stuff with apricots + prunes, OR black pudding + sliced apples instead of plum chutney and cheese.
