Lemon Chicken

Serves 4

Ingredients

  • 4 portions cooked chicken, taken off the bone and flaked
  • 1oz (25g) butter
  • 1oz (25g) flour
  • 10fl oz (300ml) chicken stock
  • juice of half a lemon lemon juice
  • half a lemon lemon, sliced

Method

  1. Melt the butter in a non-stick saucepan, stir in the flour and cook for a few minutes.
  2. Gradually stir in the stock and lemon juice, bring to the boil, stirring constantly, and simmer for a minute or two.
  3. Check the seasoning, add the flaked chicken and lemon slices, and simmer on a low heat until the chicken is heated through thoroughly, adding more stock if necessary.
  4. Serve with rice.

Serve with rice. Add more stock if necessary when heating through.
