Irish Potato Cakes

Serves 2 Cook 4 min

Ingredients

  • 2 teaspoons butter, melted
  • 1 level tablespoon flour
  •   salt and pepper
  • 6 oz mashed potato, hot
  •   fat, for frying

Method

  1. Beat butter, flour and seasoning into the hot potato, and leave to cool.
  2. Roll out and shape into half-inch-thick rounds.
  3. Fry gently in a little fat for 3 to 4 minutes until browned all over.

Notes

Serve the potato cakes with fried eggs, bacon and sausages.
