Ingredients
- 2 teaspoons butter, melted
- 1 level tablespoon flour
- salt and pepper
- 6 oz mashed potato, hot
- fat, for frying
Method
- Beat butter, flour and seasoning into the hot potato, and leave to cool.
- Roll out and shape into half-inch-thick rounds.
- Fry gently in a little fat for 3 to 4 minutes until browned all over.
Notes
Serve the potato cakes with fried eggs, bacon and sausages.
