Tomato Juice

Serves 2 pints Prep 10 min Cook 18 min

Ingredients

  • 2 lb. ripe tomatoes
  • 1 level teaspoon salt
  • 1 level teaspoon caster sugar
  • juice of ¼ lemon lemon, juiced
  • pinch black pepper

Method

  1. Put tomatoes into a pan with 1 pint cold water. Bring to the boil and simmer for 10 mins., or until soft.
  2. Rub through a nylon sieve into a clean pan.
  3. To the pulp, add salt, sugar, lemon juice and pepper. Bring to the boil and simmer for 2 mins.
  4. Cool and chill.
