Brussels Sprouts with Toasted Almonds

Ingredients

  • 900g (2lb) Brussels sprouts, peeled, cross cut in stalk
  •   butter or margarine
  • 2 spring onions, chopped
  • 50g (2oz) flaked almonds

Method

  1. Peel the sprouts and cut a cross in the stalk. This helps for even cooking but is not essential. Sprouts can be prepared the night before.
  2. Brown the almonds under the grill. Watch them like a hawk, they burn easily. Remove.
