Gnocci

Ingredients

  • 3½ ozs plain flour
  • 10 ozs potato, mashed, then whisked in an electric hand mixer to a smooth paste
  • ½ egg, beaten

Method

  1. Mash the potato then whisk in an electric hand mixer to a smooth paste.
  2. Work the flour (3½ oz) into the potato with a fork.
  3. As it goes dry, add half a beaten egg. Add more egg if necessary.
  4. Season with salt and pepper. Work the mix together with hands until it becomes pliable and workable (more egg may be needed).
  5. Work into a smooth dough and divide into quarters. Flour hands and surface, then [continue shaping — instructions cut off].
