Ingredients
- 4 prunes, soaked overnight
- 6 dried apricots, soaked overnight
- 1 large banana, thickly sliced
- 1 tbsp sultanas
- 2 tbsp honey
- 1 tsp lemon rind, finely grated
- 1 tbsp lemon juice
- ½ oz butter, cut into flakes
- 4 fl oz orange juice
- single cream
Method
- Soak prunes and apricots separately overnight.
- Pre-heat oven to 180°C (350°F) or Gas Mark 4.
- Drain soaked fruit and put into an ovenproof dish with a lid.
- Slice banana thickly and mix in, then sprinkle with sultanas.
- Dissolve honey in 3 tbsp warm water, mix with the finely grated lemon rind and juice, then pour over the fruit.
- Dot with flakes of butter, cover and bake for about half an hour.
- Pour on orange juice and put back into the oven for 5–10 minutes to heat through.
- Serve hot with single cream.
