Hot Fruit Compote

Ingredients

  • 4 prunes, soaked overnight
  • 6 dried apricots, soaked overnight
  • 1 large banana, thickly sliced
  • 1 tbsp sultanas
  • 2 tbsp honey
  • 1 tsp lemon rind, finely grated
  • 1 tbsp lemon juice
  • ½ oz butter, cut into flakes
  • 4 fl oz orange juice
  •   single cream

Method

  1. Soak prunes and apricots separately overnight.
  2. Pre-heat oven to 180°C (350°F) or Gas Mark 4.
  3. Drain soaked fruit and put into an ovenproof dish with a lid.
  4. Slice banana thickly and mix in, then sprinkle with sultanas.
  5. Dissolve honey in 3 tbsp warm water, mix with the finely grated lemon rind and juice, then pour over the fruit.
  6. Dot with flakes of butter, cover and bake for about half an hour.
  7. Pour on orange juice and put back into the oven for 5–10 minutes to heat through.
  8. Serve hot with single cream.
