Huntingdon Fidget Pie

Ingredients

  • 1 lb cooking apples, peeled, cored and sliced
  • 3/4 lb onions, peeled and sliced
  • 3/4 lb back bacon, trimmed and chopped
  •   seasoning
  • 2 tablespoons hot water
  • 6 oz shortcrust pastry
  •   beaten egg

Method

  1. Peel, core and slice the apples. Peel and slice the onions. Trim and chop the bacon.
  2. Layer the apple, onion and bacon in a 1½-pint pie dish, seasoning between the layers. Add hot water.
  3. Roll out pastry on a lightly floured board and use to cover the pie. Brush with beaten egg.
  4. Bake in a moderately hot oven (375°F / Gas Mark 5) for 40-50 minutes until cooked through and golden brown.
