Exotic Fruit Salad

Ingredients

  • 100g/4oz caster sugar
  • 300ml/½pt cold water
  • 2 large strips orange rind
  • 2 large strips lemon rind
  • ½ tsp ground ginger
  • 1 cinnamon stick
  •   fresh lemon juice, to taste
  • a selection prepared fresh and canned fruits, e.g. melon balls, Cape gooseberries, kiwi, red apples, orange segments, Muscat grapes

Method

  1. Make a sugar syrup by dissolving 100g/4oz caster sugar in 300ml/½pt cold water with two large strips of orange rind, two large strips of lemon rind, ½ tsp ground ginger and one cinnamon stick.
  2. Bring to the boil, then cool, chill and strain through a fine sieve.
  3. Add fresh lemon juice to taste.
  4. Pour over a selection of prepared fresh and canned fruits, such as melon balls, Cape gooseberries, kiwi, red apples, orange segments and Muscat grapes.
