Ingredients
- 1 red onion, thinly sliced
- 4 streaky bacon, roughly chopped
- 200g/7oz cooked potatoes, cut into 2.5cm/1in pieces
- 100g/4oz feta cheese, crumbled
- 8 large eggs, beaten
- 2 tbsp fresh or frozen basil, chopped
Method
- Heat oil in a 23cm/9in frying pan, fry onion for 1 min. Add bacon, fry for 5 mins. Stir in the potatoes, cook for 5 mins, stirring frequently. Add cheese and stir. Beat the eggs, add basil, and season.
- Preheat grill to high. Add eggs to pan and stir. Cook over a medium heat for 4–5 mins. Place under the grill, cook for 5 mins until golden and puffed. Serve with Greek salad or vegetables.
Notes
A great way to use up spuds — roasted, boiled or mashed all work well. Serve with Greek salad or vegetables.
