Turkey Stuffing

Serves Stuffs a 5kg/10lb turkey From Adapted from a recipe for Persian chicken stuffed with dried fruit

Ingredients

  • 2 onions, finely chopped
  • 4 tbsp unsalted butter
  • 500g/1lb prunes, soaked, stoned and chopped
  • 500g/1lb dried apricots, soaked and chopped
  • 4 apples, peeled, cored and chopped
  • 120g/4oz seedless raisins
  • 120g/4oz broken walnuts
  • 2 tsp ground cinnamon
  •   seasoning

Method

  1. Sauté the chopped onions in the butter until soft and golden.
  2. Add the chopped prunes, apricots, apples, raisins and broken walnuts and cook gently until the fruits plump up.
  3. Season to taste with salt, pepper and the ground cinnamon.

Notes

The quantity given will stuff a 5kg/10lb turkey fore and aft, as you do not want to cram the bird to bursting.
