Ingredients
- 2 onions, finely chopped
- 4 tbsp unsalted butter
- 500g/1lb prunes, soaked, stoned and chopped
- 500g/1lb dried apricots, soaked and chopped
- 4 apples, peeled, cored and chopped
- 120g/4oz seedless raisins
- 120g/4oz broken walnuts
- 2 tsp ground cinnamon
- seasoning
Method
- Sauté the chopped onions in the butter until soft and golden.
- Add the chopped prunes, apricots, apples, raisins and broken walnuts and cook gently until the fruits plump up.
- Season to taste with salt, pepper and the ground cinnamon.
Notes
The quantity given will stuff a 5kg/10lb turkey fore and aft, as you do not want to cram the bird to bursting.
