Ingredients
- 8 oz margarine
- 8 oz castor sugar
- 4 large eggs, large
- 12 oz mixed dried fruit
- 4 oz glacé cherries
- 10 oz plain flour
- 1 teasp baking powder
- 1 teasp mixed spice
Method
- Grease and line a 7–7½ inch cake tin.
- Put all ingredients in a basin and beat until well mixed.
- Spoon into the prepared tin and make a hollow in the centre.
- Bake in the centre of the oven at Gas Mark 3 (325°F) for 1¼–1½ hours.
- Turn out and cool.
Notes
Bake in centre of oven. Cook time is approximate — recipe states 1¼–1½ hours.
