Ingredients
- 1 salmon
- 1 smoked haddock
- 1 cod
- milk, a little, for poaching
- potatoes, mashed
- cream, for mash and/or white sauce
- salt and pepper
- good quantity cheddar cheese, grated, for mash and topping
- butter, for mash
- white sauce, homemade or use rest of cream
- 2 dill
- 2 parsley
Method
- Poach 1 fillet salmon, 1 tail end smoked haddock, and 1 fillet cod in a little milk for 2 minutes. Drain and keep the liquid.
- Mash potatoes with cream, salt and pepper, and butter, then mix in a good quantity of grated cheddar.
- Make a white sauce (or use the rest of the cream). Put in 2 teaspoons of dill and parsley.
- Put 2 tablespoons of sauce in individual dishes. Flake all the fish and layer over the sauce. Season with salt and pepper.
- Top with a good layer of cheddar mashed potato, then grated cheddar. Oven 200°C for 30 minutes.
