Springy Lamb Leg

Ingredients

  •   lamb leg
  •   rosemary, inserted in cuts
  • small amount onion, sliced
  •   carrot, cut into strips

Method

  1. Insert rosemary into cuts in the lamb leg.
  2. Place lamb over carrot strips in a roasting dish with a small amount of sliced onion.
  3. Cook in oven at gas mark 5 for 20–30 minutes, then reduce to oven gas mark 4 for 1 hour and 30 minutes.

Notes

Served with cauliflower cheese, mash, and Yorkshire puddings sprinkled with chopped rosemary before heating.
