Danish Bacon and Cheese Flan

Ingredients

  • 6oz shortcrust pastry, rolled out to fit 8" flan tin
  • 10oz Danish streaky bacon, rind cut off; 6oz chopped, remainder made into bacon rolls
  • 4oz cheddar cheese, grated
  • 3 eggs
  • ½ pint single cream
  • 1 pint milk
  •   salt and pepper
  •   tomatoes, cut into small wedges, to decorate

Method

  1. Chop 6oz of bacon and place in the bottom of the flan case, then cover with grated cheese.
  2. Beat the eggs together with the cream, milk and seasoning, then pour over the bacon and cheese mixture.
  3. Bake at 375°F (Gas Mark 5) for approximately 35 minutes until golden.
  4. Flatten out the remaining bacon, cut and make into small bacon rolls, then grill.
  5. Cut tomatoes into small wedges and use with the bacon rolls to decorate the flan. Serve hot or cold.
