Ingredients
- 2 large oranges, large
- 1 lemon
- 4tbsp light soft brown sugar
- 1 small pineapple, small, ripe
- 1 small papaya, small
- 2 passion fruit
- 1 banana
Method
- Preheat the oven to 200°C (180°C fan) mark 6. Squeeze the juice of the oranges and the lemon. Put 150ml (5fl oz) orange juice, 3tbsp lemon juice and the sugar in a small pan. Bring to the boil and cook, stirring, for 5min. Set aside.
- Remove the skin and the core of the pineapple. Peel, halve and remove seeds from the papaya. Remove pulp from the passion fruit. Thickly slice all the fruit and divide among four 20.5cm (8in) squares of foil. Spoon some of the passion fruit pulp and 3-4tbsp sauce over each serving, reserving the remainder.
- Seal the parcels and cook for 10min or until hot. Open the parcels and serve with the remaining sauce.
