Duck Pieces - Breast

Ingredients

  •   duck breast
  •   soy sauce
  •   lemon zest
  •   cardamom
  •   coriander
  •   sesame oil
  •   chives, chopped
  •   lime juice
  • a little salt
  •   tomatoes, thick sliced
  •   milk
  •   flour
  •   oil, hot, for frying
  •   mushrooms, sliced
  •   onions, chopped
  •   green beans, sliced
  • a little fat or oil

Method

  1. Marinade duck breast with soy sauce, lemon zest, cardamom, coriander, sesame oil, chopped chives and lime juice overnight.
  2. Trim off some fat. Dry thoroughly.
  3. Cut across the skin and rub in a little salt.
  4. Fry skin side down in a very hot pan (no fat) for 3–5 mins. Then turn and cook for 15–9 mins.
  5. To serve: dip thick sliced tomatoes in milk, then in flour. Fry in hot oil until crisp on each side (2–15 mins).
  6. Fry sliced mushrooms, chopped onions and sliced green beans in a little fat or oil for 2–5 mins.
  7. Add the soy sauce mix from the marinade. Warm through and serve.

Notes

Marinade overnight. Trim off some fat before cooking. Dry thoroughly before frying.
