Smoked Salmon and Apple Cocktail

Serves 6

Ingredients

  • 8oz smoked salmon cocktail bits
  • 1 green-skinned eating apple, cored and chopped into small dice
  • 2 sticks celery, thinly sliced
  • 2 tbsps lemon juice
  • 6 tbsps oil
  • ½ lemon rind, finely grated
  • 1 tbspn wine vinegar
  • 2 teaspoons caster sugar
  •   pepper
  •   celery leaves, for garnish

Method

  1. Cut the smoked salmon into thin strips. Core the apple then chop into small dice. Thinly slice the celery. Put all together in a bowl.
  2. Blend together all the ingredients for the dressing and pour over the mixture in the bowl. Stir until well coated.
  3. Leave in a covered bowl for 1 hour, stirring occasionally. Chill.
  4. To serve, pile into individual dishes and garnish with celery leaves. Serve with brown bread and butter or crispbreads if liked.
