Ingredients
- 8oz smoked salmon cocktail bits
- 1 green-skinned eating apple, cored and chopped into small dice
- 2 sticks celery, thinly sliced
- 2 tbsps lemon juice
- 6 tbsps oil
- ½ lemon rind, finely grated
- 1 tbspn wine vinegar
- 2 teaspoons caster sugar
- pepper
- celery leaves, for garnish
Method
- Cut the smoked salmon into thin strips. Core the apple then chop into small dice. Thinly slice the celery. Put all together in a bowl.
- Blend together all the ingredients for the dressing and pour over the mixture in the bowl. Stir until well coated.
- Leave in a covered bowl for 1 hour, stirring occasionally. Chill.
- To serve, pile into individual dishes and garnish with celery leaves. Serve with brown bread and butter or crispbreads if liked.
