Ingredients
- 1 lb boiled potatoes
- 2 teasps parsley, finely chopped
- 1 level teasp salt
- pinch mace
- ¼ teasp pepper
- 1 egg
- 2 ozs butter or margarine
Method
- Place potatoes whilst still warm in the mixing bowl, break in the egg and add all the remaining ingredients.
- Whisk at medium speed until light and fluffy.
- Pipe in pyramids on a baking tray and bake at 425°F (Gas 6) for 20–25 minutes or until golden brown.
Notes
This mixture may be piped, or 'forked' over the top of a meat or fish pie and baked in the same way.
