Duchesse Potatoes

Ingredients

  • 1 lb boiled potatoes
  • 2 teasps parsley, finely chopped
  • 1 level teasp salt
  • pinch mace
  • ¼ teasp pepper
  • 1 egg
  • 2 ozs butter or margarine

Method

  1. Place potatoes whilst still warm in the mixing bowl, break in the egg and add all the remaining ingredients.
  2. Whisk at medium speed until light and fluffy.
  3. Pipe in pyramids on a baking tray and bake at 425°F (Gas 6) for 20–25 minutes or until golden brown.

Notes

This mixture may be piped, or 'forked' over the top of a meat or fish pie and baked in the same way.
