Lemon Layer Cake

Ingredients

  • 4 oz self-raising flour, sifted
  • 1 teasp. baking powder
  • 4 oz margarine
  • 4 oz caster sugar
  •   lemon, grated rind
  • 2 large eggs
  • 1-2 drops yellow food colouring, optional
  • 2 oz butter or margarine
  • 6 oz icing sugar
  •   lemon, juice of 1 lemon

Method

  1. Grease and line the base of two 7-inch sandwich tins.
  2. Sift the flour and baking powder together.
  3. Place all cake ingredients in a basin and beat well until smooth and creamy, for about 5 minutes.
  4. Spoon into prepared tins.
  5. Bake at Gas Mark 3, 325°F for 30-35 minutes.
  6. Turn out onto a wire rack to cool.
  7. Beat the filling ingredients (butter or margarine, icing sugar, lemon juice, and optional food colouring) together until smooth.
  8. Split each cake in half and sandwich the four layers together with the lemon filling.
