Cheshire and Apple Puffs

Ingredients

  • 500g/1½lb ready-made puff pastry
  • 2 red apples, cored and thickly sliced
  • 175g/6oz Cheshire cheese
  • 2 tbsp light muscovado sugar
  •   ground cinnamon
  • 25g/1oz flaked almonds
  • a little icing sugar

Method

  1. Preheat the oven to 220C/425F/Gas 7. Roll out the pastry on a lightly floured surface to a 5mm/¼in thickness. Cut into four rectangles and place on a dampened baking sheet.
  2. Divide the apple slices among the rectangles. Lay them along the length of each one in an overlapping layer, leaving a margin around the edge of each rectangle.
  3. Lay the cheese over the apple and sprinkle with the sugar and cinnamon. Bake for about 15 minutes until golden and bubbling.
  4. Spread out the almonds on aluminium foil, then place them under the grill and lightly toast. Sprinkle the almonds over the puffs, dust with icing sugar and serve warm.

Notes

Serve warm with scoops of vanilla ice cream if you like.
