Orange Cake

Ingredients

  • 3oz / 75g soft margarine
  • 6oz / 225g self-raising flour
  • 6oz / 225g caster sugar
  • 2 tablespoons milk
  •   chopped walnuts
  •   mandarin oranges, to decorate
  •   orange-flavoured icing

Method

  1. Place all ingredients in a mixing bowl and beat with a wooden spoon for 2–3 minutes until well mixed and smooth.
  2. Place the mixture in a greased and bottom-lined 1lb loaf tin.
  3. Bake in the middle of a pre-heated oven at 325°F / 160°C / Gas Mark 3 for 1–1¼ hours.
  4. Turn out, remove the paper and leave to cool.
  5. Split the cake in half and sandwich with some of the icing. Spread a little icing around the sides of the cake and coat with chopped walnuts. Spread and pipe remaining icing on top of the cake and arrange the mandarin segments in three rows.
