Singin' Hinnies

Serves 6-8 Cook 12 min

Ingredients

  • 12 oz. plain flour
  • 2 oz. ground rice
  • 1 teasp. salt
  • 2 teasp. baking powder
  • 2 oz. castor sugar
  • 1 oz. lard
  • 3 oz. currants
  • ¼ pint milk
  •   oil or lard, for greasing griddle

Method

  1. Sieve together the flour, ground rice, salt and baking powder.
  2. Add the sugar and rub in the lard.
  3. Stir in the currants.
  4. Add milk and mix to a soft dough.
  5. Take portions of the dough and knead lightly on a floured surface. Roll out and shape into circles approximately 4 inches in diameter. You can use a saucer as a guide and cut around the edge to give an even shape.
  6. Lightly grease a griddle or solid based frying pan and put over the heat. Put hinnies on to greased surface and cook for 5-6 minutes until golden brown on underside.
  7. Flip the hinnies over and cook for the same length of time on the other side.
  8. Serve hot with butter and jam or honey.

Notes
