Ingredients
- 12 oz. plain flour
- 2 oz. ground rice
- 1 teasp. salt
- 2 teasp. baking powder
- 2 oz. castor sugar
- 1 oz. lard
- 3 oz. currants
- ¼ pint milk
- oil or lard, for greasing griddle
Method
- Sieve together the flour, ground rice, salt and baking powder.
- Add the sugar and rub in the lard.
- Stir in the currants.
- Add milk and mix to a soft dough.
- Take portions of the dough and knead lightly on a floured surface. Roll out and shape into circles approximately 4 inches in diameter. You can use a saucer as a guide and cut around the edge to give an even shape.
- Lightly grease a griddle or solid based frying pan and put over the heat. Put hinnies on to greased surface and cook for 5-6 minutes until golden brown on underside.
- Flip the hinnies over and cook for the same length of time on the other side.
- Serve hot with butter and jam or honey.
