Chicken Burgers

Ingredients

  • 2 chicken breasts, processed
  • 1 egg
  •   chives
  •   breadcrumbs, fresh and white
  •   garlic or tarragon
  •   salt and pepper
  •   fat, for frying
  •   bread buns
  •   single cream, warmed
  •   cheese, grated and melted
  •   tomatoes, lightly fried

Method

  1. Mix 2 chicken breasts in a processor with 1 egg, chives, fresh white breadcrumbs, garlic or tarragon, and salt and pepper.
  2. Fry in hot fat for 1–2 minutes each side, then put in a moderate oven for 15–20 minutes in the frying pan.
  3. Serve on a bread bun with a thick cheese sauce on top (i.e. warm single cream with melted grated cheese). Top with lightly fried tomatoes.
