Ingredients
- 1½ lb new potatoes, scrubbed
- ½ bunch spring onions, finely chopped
- 2 tbsp mixed fresh mint and parsley, chopped
- 2 tbsp balsamic or white wine vinegar
- 5 tbsp walnut or olive oil

Method
- Add the potatoes to boiling, salted water, bring back to the boil and simmer for 15 minutes or until just tender.
- Meanwhile, make the dressing: mix together the vinegar and oil with plenty of seasoning.
- Drain the potatoes and tip into a large bowl, scatter over the spring onions and herbs, pour on the dressing and toss. Serve cold.
