Potato Salad

Serves 4-6 Cook 15 min

Ingredients

  • 1½ lb new potatoes, scrubbed
  • ½ bunch spring onions, finely chopped
  • 2 tbsp mixed fresh mint and parsley, chopped
  • 2 tbsp balsamic or white wine vinegar
  • 5 tbsp walnut or olive oil
  •   seasoning

Method

  1. Add the potatoes to boiling, salted water, bring back to the boil and simmer for 15 minutes or until just tender.
  2. Meanwhile, make the dressing: mix together the vinegar and oil with plenty of seasoning.
  3. Drain the potatoes and tip into a large bowl, scatter over the spring onions and herbs, pour on the dressing and toss. Serve cold.
