Braised Red Cabbage

Ingredients

  • 1 small red cabbage
  • 1 onion, sliced
  • 30g butter
  • 1 small cooking apple, peeled and sliced
  • 1 small dessert apple, peeled and sliced
  • 2 tsp soft light brown sugar
  • 2 tsp red wine vinegar
  • pinch ground cloves
  •   salt
  •   freshly ground black pepper

Method

  1. Shred the cabbage and discard the hard stalks. Rinse well.
  2. In a large heavy saucepan, fry the onion in the butter until it begins to soften.
  3. Add the drained but still wet cabbage, the apples, sugar, vinegar and cloves, and season with salt and pepper.
  4. Cook for 15 minutes.
  5. Cover and cook at a very low heat for about 2 hours until the cabbage forms a soft mass, adding a little water if necessary during cooking.
  6. Taste and add more salt, pepper or sugar as necessary.
