Ingredients
- 1 small red cabbage
- 1 onion, sliced
- 30g butter
- 1 small cooking apple, peeled and sliced
- 1 small dessert apple, peeled and sliced
- 2 tsp soft light brown sugar
- 2 tsp red wine vinegar
- pinch ground cloves
- salt
- freshly ground black pepper
Method
- Shred the cabbage and discard the hard stalks. Rinse well.
- In a large heavy saucepan, fry the onion in the butter until it begins to soften.
- Add the drained but still wet cabbage, the apples, sugar, vinegar and cloves, and season with salt and pepper.
- Cook for 15 minutes.
- Cover and cook at a very low heat for about 2 hours until the cabbage forms a soft mass, adding a little water if necessary during cooking.
- Taste and add more salt, pepper or sugar as necessary.
