roast chicken breast or joint, sliced, some shredded

mayonnaise

lettuce, shredded

lemon juice

bread slices

chicken, duck or goose fat, melted

cucumber, sliced

cold salsa or pickle
Method
- Roast chicken breast or joint. Slice chicken (with skin). Shred some slices and mix with mayonnaise.
- Shred lettuce and mix with a squeeze of lemon juice.
- Brush bread slices with melted chicken, duck or goose fat.
- Spread with chicken mix. Top with shredded lettuce and slices of chicken.
- Cover with another brushed slice of bread.
- Serve with tomato, sliced cucumber, cold salsa or pickle.
