Chicken Sandwiches

Ingredients

  •   roast chicken breast or joint, sliced, some shredded
  •   mayonnaise
  •   lettuce, shredded
  •   lemon juice
  •   bread slices
  •   chicken, duck or goose fat, melted
  •   tomato
  •   cucumber, sliced
  •   cold salsa or pickle

Method

  1. Roast chicken breast or joint. Slice chicken (with skin). Shred some slices and mix with mayonnaise.
  2. Shred lettuce and mix with a squeeze of lemon juice.
  3. Brush bread slices with melted chicken, duck or goose fat.
  4. Spread with chicken mix. Top with shredded lettuce and slices of chicken.
  5. Cover with another brushed slice of bread.
  6. Serve with tomato, sliced cucumber, cold salsa or pickle.
