Stir-fried Brussels Sprouts

Ingredients

  • 1 large onion
  • 700g (1½ lb) Brussels sprouts
  • 3 tbsp vegetable oil
  •   garlic
  •   salt and ground black pepper
  •   dry sherry
  • 2 tbsp soy sauce
  •   walnut pieces

Method

  1. Very finely shred the onion and Brussels sprouts.
  2. Heat the oil in a large frying pan. Add the garlic and cook for 1 min.
  3. Add the shredded onion and Brussels sprouts. Stirring, cook for 4 to 5 min. Season.
  4. Stir in the sherry and soy sauce and cook for a further minute. Stir in the walnut pieces.

Notes

A new look for a traditional vegetable. Stir-frying leaves the vegetables tender, but still crisp.
