Fruit Compote

Serves 2 Cook 25 min

Ingredients

  • 100g/4oz assorted berries, such as blackberries, redcurrants, blackcurrants and blueberries
  • 8 plums, stoned and sliced
  • 2 nectarines, stoned and sliced
  • 2 peaches, stoned and sliced
  • 50g/2oz caster sugar
  • squeeze fresh lemon juice

Method

  1. Place the berries, nectarines and peaches in a saucepan, then add the sugar and lemon juice. Cook gently for 20-25 minutes until the fruit is soft but still holds its shape. Allow to cool before serving.
