Mince Pie for 4

Serves 4 Cook 30 min

Ingredients

  • 6oz puff pastry
  • ½oz dripping
  • 1 onion, sliced thinly
  • ½lb minced beef
  • ½oz flour
  • ¼ pint water
  •   salt and pepper
  •   Worcestershire sauce or meat extract
  •   carrots, chopped and boiled
  •   eggs, hard boiled and halved
  • 1 egg, beaten, for glazing

Method

  1. Melt dripping in saucepan, fry onion in it for a few minutes to soften and brown.
  2. Mix in beef, cook quickly for 2-3 minutes.
  3. Sprinkle in flour, stir in water and cook gently for about 10 minutes.
  4. Add seasonings and Worcestershire sauce or meat extract, then add carrots. Put mixture into pie dish with the halved hard-boiled eggs.
  5. Cover with pastry, make a slit in it and brush with beaten egg.
  6. Bake at gas mark 6, electricity 400°F (200°C) for about 30 minutes until well browned. Serve hot.
