Ingredients
- 100g/4oz butter, softened
- 100g/4oz caster sugar
- 2 eggs, beaten
- 175g/6oz self-raising flour
- 1 tsp vanilla extract
- 3-4 tbsp milk
Method
- Beat butter and sugar for 5 minutes until light and fluffy. Beat in eggs, a little at a time, then fold in flour, vanilla and milk to form a soft consistency that drops off the spoon easily.
- Spoon into a buttered 900ml/1½ pint basin and smooth. Cover with greaseproof paper and foil, then steam for 1¼ hours until risen and firm. Turn out and serve with your chosen sauce.
Notes
For microwave ovens, cook on PL9/High for 4½ minutes; standing time 5 minutes. Do not overwrap with foil.
