Rabbit Roasted with Mustard

Ingredients

  • 8 rabbit pieces (or thorax)
  •   mustard
  •   olive oil
  •   onions, sliced thickly
  •   carrots
  •   celery
  • a little water
  •   white wine
  • ½ pt double cream
  • 2-3 tsps redcurrant jelly
  • ½ tsp mustard

Method

  1. Smear rabbit pieces (or thorax) with mustard and olive oil. Place in dish over sliced (thickly) onions, carrots and celery with a little water and white wine.
  2. Put in oven at Gas 6 for 30 mins.
  3. Remove rabbit from dish. Remove vegetables from dish. Add ½ pt double cream to liquid left in dish. Simmer carefully until thickened.
  4. Stir in 2–3 tsps redcurrant jelly and ½ tsp mustard.
  5. Replace rabbit and cook in oven until tender, 10–20 mins.
