Ingredients
- 8 rabbit pieces (or thorax)
- mustard
- olive oil
- onions, sliced thickly
- carrots
- celery
- a little water
- white wine
- ½ pt double cream
- 2-3 tsps redcurrant jelly
- ½ tsp mustard
Method
- Smear rabbit pieces (or thorax) with mustard and olive oil. Place in dish over sliced (thickly) onions, carrots and celery with a little water and white wine.
- Put in oven at Gas 6 for 30 mins.
- Remove rabbit from dish. Remove vegetables from dish. Add ½ pt double cream to liquid left in dish. Simmer carefully until thickened.
- Stir in 2–3 tsps redcurrant jelly and ½ tsp mustard.
- Replace rabbit and cook in oven until tender, 10–20 mins.
