Scones with Smoked Salmon

Ingredients

  • 225g (8oz) self-raising flour
  • 1 tsp baking powder
  • 4 tsp mustard powder
  • 4 tsp cayenne pepper
  • 1 tsp salt
  • 25g (1oz) butter, diced
  • 50g (2oz) hard goats' cheese, grated
  • 25g (1oz) black olives, stoned
  • 1 egg
  • 150ml (¼ pint) semi-skimmed milk
  •   extra milk, to glaze
  • 100ml (4fl oz) crème fraîche
  • 100g (4oz) smoked salmon ribbons
  •   parsley sprigs, to garnish
