Ingredients
- 3½–4 lb free range chicken
- salt and pepper
- trickle oil
- 225g chicken wings, for sauce
- 2 sticks celery, diced
- 1 onion, chopped
- 1 carrot, chopped
Method
- Season the free range 3½–4 lb bird with salt and pepper.
- Heat a trickle of oil in a large frying pan. Fry the chicken on all sides until light golden.
- Place the chicken in a roasting tin and trickle the leftover oil from the pan over it.
- Put in the oven at gas mark 6 for 1 hour, basting every 20 minutes.
- For the chicken sauce: fry 225g chicken wings until golden brown. Add 2 sticks diced celery, 1 chopped onion and 1 chopped carrot.
