Roast Chicken

Ingredients

  • 3½–4 lb free range chicken
  •   salt and pepper
  • trickle oil
  • 225g chicken wings, for sauce
  • 2 sticks celery, diced
  • 1 onion, chopped
  • 1 carrot, chopped

Method

  1. Season the free range 3½–4 lb bird with salt and pepper.
  2. Heat a trickle of oil in a large frying pan. Fry the chicken on all sides until light golden.
  3. Place the chicken in a roasting tin and trickle the leftover oil from the pan over it.
  4. Put in the oven at gas mark 6 for 1 hour, basting every 20 minutes.
  5. For the chicken sauce: fry 225g chicken wings until golden brown. Add 2 sticks diced celery, 1 chopped onion and 1 chopped carrot.
