Ham and Vegetable Salad

Ingredients

  • 2 tsp Dijon mustard
  • 2 tbsp mayonnaise
  • 2 tbsp flat-leaf parsley, roughly chopped
  • juice of 1 lemon, juiced
  • 2 x 400g can mixed vegetables, drained
  • 250g sliced ham, 8 slices

Method

  1. To make dressing: mix together mustard, mayonnaise, parsley and lemon juice, then season to taste with salt and freshly ground black pepper.
  2. Fold vegetables and parsley into dressing and serve with ham.
