Ingredients
- 2 tsp Dijon mustard
- 2 tbsp mayonnaise
- 2 tbsp flat-leaf parsley, roughly chopped
- juice of 1 lemon, juiced
- 2 x 400g can mixed vegetables, drained
- 250g sliced ham, 8 slices
Method
- To make dressing: mix together mustard, mayonnaise, parsley and lemon juice, then season to taste with salt and freshly ground black pepper.
- Fold vegetables and parsley into dressing and serve with ham.
