Bath Buns

Serves 22 buns Cook 20 min

Ingredients

  • 1 quantity Rich White Bread Dough
  • 170g (6 oz) sultanas
  • 85g (3 oz) mixed peel, chopped
  • 1 large lemon, finely grated rind only
  • 85g (3 oz) sugar lumps, lightly crushed

Method

  1. Knock down the proved dough, then gradually knead in the fruit, peel and lemon rind.
  2. Shape into 22 even-sized balls and arrange on greased baking trays.
  3. Sprinkle with the crushed sugar lumps. Cover loosely with oiled cling film and leave to rise in a warm place until doubled in size.
  4. Meanwhile, heat the oven to Gas Mark 7, 425°F, 220°C.
  5. Bake the buns for 15 to 20 minutes until they are golden brown. Cool on a wire rack.

Notes

If you like, brush the buns with a little honey as soon as they come out of the oven.
