Ingredients
- chicken thighs
- flour
- egg, beaten
- thyme
- cherry tomatoes, halved
- rocket
- baby spinach
- salt
- lemon juice
Method
- Coat chicken thighs with flour, then beaten egg and thyme.
- Fry 2 minutes on each side.
- Then put in oven for 10–15 minutes.
- Serve with halved cherry tomatoes and rocket and baby spinach, sprinkled with salt and lemon juice. Plus potato salad.
