Lemon and Garlic Turkey Roast

Ingredients

  • 3 lemons
  • 100g/4oz butter, softened
  • 1 tsp dried sage
  • 3 garlic cloves, crushed
  • 2 large turkey drumsticks
  • 2 large onions, roughly chopped
  • 200g/8oz long grain rice
  • 600ml/1 pint hot vegetable stock

Method

  1. Preheat oven to 190C/Gas 5/fan oven 170C. Finely grate the zest of two lemons, squeeze the juice of one. Thinly slice the remaining lemon. Mash butter, lemon zest, sage and garlic together. Season. Loosen the turkey skin and spread a quarter of the flavoured butter under the skin of each drumstick. Arrange lemon slices on top of the butter. Put on a baking tray, cover with foil and roast for 30 minutes.
  2. Meanwhile, melt the remaining butter in a roasting tin on the hob. Cook the onion for 8 minutes until soft. Stir in the rice, stock and lemon juice and bring to the boil.
  3. Transfer the turkey to a wire rack and lay on top of the rice. Bake uncovered for 30-35 minutes. Fluff up rice with a fork. Season.
