Mushroom Soup

Ingredients

  • 1 chicken stock cube
  • ½ red onion
  • 250 gms mushrooms
  • a little mashed potato
  • 1 teasp mint, chopped
  • 1 teasp parsley, chopped
  • 100 mls cream
  •   salt and pepper

Method

  1. Sweat onions, then add mushrooms and herbs.
  2. Then add cream. Season with salt and pepper.
  3. Blitz in liquidiser, reheat and serve.
