Mini Pizzas

Serves 4

Ingredients

  • 4 muffins
  • 1 onion, finely chopped
  • 2oz/50g mushrooms, chopped
  • 8 tablespoons oil
  • 1 teaspoon mixed herbs
  • 2 tomatoes, sliced
  • 3oz/75g Dairy Master cheddar cheese, grated
  • 2oz/50g can anchovies

Method

  1. Preheat a browning dish on HIGH for 6 minutes.
  2. Slice the muffins in half and brush the cut surface very lightly with oil.
  3. Place the cut surface down on the browning dish and cook on HIGH for 2 minutes.
  4. Place the onion, mushrooms and 2 tablespoons of oil in a basin and cook on HIGH for 3 minutes. Stir in the mixed herbs.
  5. Turn the muffins over, with the cut surface facing up. Place a spoonful of the onion mixture on each muffin, cover with a slice of tomato and sprinkle with cheese. Halve each anchovy fillet lengthways and arrange in a cross pattern on top of the cheese.
  6. Cook on HIGH for 1-2 minutes or until the cheese has melted.
