Summer Berry Trifle

Ingredients

  • 300g Madeira cake, broken into rough 5cm chunks
  • 3 tbsp sweet dessert wine
  • 200g blueberries
  • 200g strawberries
  • 200g raspberries
  • 2 x 250ml tubs mascarpone
  • 3 tbsp icing sugar
  • zest of 2 limes, zested
  • 50g light muscovado sugar

Method

  1. Break a 300g Madeira cake into rough 5cm chunks and place in the bottom of a glass trifle dish. Drizzle 3 tbsp sweet dessert wine over the cake. Scatter 200g each of blueberries, strawberries and raspberries on top.
  2. Mix together 2 x 250ml tubs of mascarpone, 3 tbsp icing sugar and the zest of 2 limes. Spoon over the top of the fruit and finish with 50g light muscovado sugar.

Notes

A really fresh-tasting trifle with lots of berries and booze. 666 calories, 47g fat per serving.
