Ingredients
- 300g Madeira cake, broken into rough 5cm chunks
- 3 tbsp sweet dessert wine
- 200g blueberries
- 200g strawberries
- 200g raspberries
- 2 x 250ml tubs mascarpone
- 3 tbsp icing sugar
- zest of 2 limes, zested
- 50g light muscovado sugar
Method
- Break a 300g Madeira cake into rough 5cm chunks and place in the bottom of a glass trifle dish. Drizzle 3 tbsp sweet dessert wine over the cake. Scatter 200g each of blueberries, strawberries and raspberries on top.
- Mix together 2 x 250ml tubs of mascarpone, 3 tbsp icing sugar and the zest of 2 limes. Spoon over the top of the fruit and finish with 50g light muscovado sugar.

A really fresh-tasting trifle with lots of berries and booze. 666 calories, 47g fat per serving.
