Ingredients
- 225g/8oz new potatoes, scrubbed
- 50g/2oz butter
- 1 tbsp oil
- 175g/6oz carrots, peeled and shredded
- parsnips
- salt and freshly ground black pepper
- 1 tbsp fresh chives, chopped
Method
- Place the potatoes in a pan of salted water. Bring to the boil, cover and simmer for 10-15 minutes until tender. Drain and cut into quarters.
- Melt the butter and oil in a frying pan and stir-fry the potatoes, carrots and parsnips for 4-5 minutes, until heated through. Season well and stir in the chives. Serve immediately.
