Hot Potatoes and Parsnips

Ingredients

  • 225g/8oz new potatoes, scrubbed
  • 50g/2oz butter
  • 1 tbsp oil
  • 175g/6oz carrots, peeled and shredded
  •   parsnips
  •   salt and freshly ground black pepper
  • 1 tbsp fresh chives, chopped

Method

  1. Place the potatoes in a pan of salted water. Bring to the boil, cover and simmer for 10-15 minutes until tender. Drain and cut into quarters.
  2. Melt the butter and oil in a frying pan and stir-fry the potatoes, carrots and parsnips for 4-5 minutes, until heated through. Season well and stir in the chives. Serve immediately.
