Ingredients
- 1 egg yolk
- ½ sm onion, chopped
- pinch salt
- ½ mustard
- 6 groundnut oil
- black pepper
- lemon juice
- 1 fresh parsley, chopped
Method
- Combine egg yolk, chopped onion, pinch of salt and mustard. Drizzle in groundnut oil slowly (about 2 mins) into the mix in an electric mixer on slow speed to make mayonnaise.
- Then add black pepper, lemon juice, and 1 tablespoon chopped fresh parsley.
- Pulse all in mixer until fine.
Notes
Or use bought mayonnaise. Can be served with fish.
