Potato Cakes

Ingredients

  • some leftover mashed potato
  • a drop of milk
  • a pinch of salt
  • a bit of flour
  • a bit of bacon fat

Method

  1. Mix together leftover mashed potato with a drop of milk and a pinch of salt.
  2. Add a bit of flour to bind it all together.
  3. Roll out on a floured board to about ¼-inch thick.
  4. Cut into triangles.
  5. Brown them up quickly on both sides in a bit of bacon fat in a hot cast-iron griddle or heavy frying pan.

Notes

You're supposed to use a hot cast-iron griddle for this, but a heavy frying pan works quite nicely too.
