Bean Fritters Croquettes

Serves about 12 croquettes

Ingredients

  • 250g cannelloni beans, boiled then mashed
  • 2 shakes chilli powder
  • 4 shallots, finely chopped
  • 1 egg
  • 3 grams mature cheese, grated
  •   pepper
  •   salt
  •   egg, for coating
  •   breadcrumbs, for coating

Method

  1. Boil 250g cannelloni beans then mash with 2 shakes of chilli powder, finely chopped 4 shallots, 1 egg, and 3 grams of grated mature cheese. Add pepper and salt.
  2. Shape into about 12 croquettes (sausage shapes). Dip into egg then breadcrumbs.
  3. Deep fry then serve with spiced tomato sauce.
