Ingredients
- 2 lamb loin chops
- rosemary
- butter
- 1 red onion, sliced
- coriander
- 2 tablesp tomato purée
- 1 teasp sugar
- just under ½ pint water
Method
- Sprinkle 2 chops with rosemary and stand 15–20 mins.
- Then fry lightly on each side for about 3–5 mins. Tiny amount of fat.
- Using same pan, add butter and fry one sliced med red onion until soft.
- Sprinkle with coriander, then add 2 tablespoons tomato purée, 1 teaspoon sugar and just under ½ pint water and bring to boil.
- Stir thoroughly then add chops and cook for 10 mins.
