Lamb Chops – Loin

Ingredients

  • 2 lamb loin chops
  •   rosemary
  •   butter
  • 1 red onion, sliced
  •   coriander
  • 2 tablesp tomato purée
  • 1 teasp sugar
  • just under ½ pint water

Method

  1. Sprinkle 2 chops with rosemary and stand 15–20 mins.
  2. Then fry lightly on each side for about 3–5 mins. Tiny amount of fat.
  3. Using same pan, add butter and fry one sliced med red onion until soft.
  4. Sprinkle with coriander, then add 2 tablespoons tomato purée, 1 teaspoon sugar and just under ½ pint water and bring to boil.
  5. Stir thoroughly then add chops and cook for 10 mins.
